Prize Winning Pumpkin Bread

You may want to bake a double or triple batch as this delicious treat won't last long on the plate!

Prize Winning Pumpkin Bread
  • 3 cups - flour
  • 2 cups - sugar
  • 1 cup - brown sugar
  • 2 teaspoons - baking soda
  • 1 teaspoon - salt
  • 2 teaspoons - ground cinnamon
  • 1 teaspoon - ground nutmeg
  • 1 teaspoon - pumpkin pie spice
  • 1 teaspoon - ground ginger
  • 2 cups - pumpkin puree (or cubed, cooked fresh)
  • 4 - eggs
  • 1 cup - canola oil
  • 2/3 cups - water
  • 1 cup - chopped pecans
  • 1 teaspoon - vanilla

Directions

  1. Preheat the oven to 350 degrees.
  2. Lightly grease two standard bread loaf pans.
  3. Whisk together the flour, sugar, brown sugar, baking soda, salt, and spices.
  4. Add the pumpkin, eggs, canola oil, and water.
  5. Fold in the pecans, vanilla, and raisins (if desired).
  6. Pour the batter evenly between the two pans.
  7. Bake for one hour. When a toothpick comes out clean, it’s done. Impossible to stop eating!
